Litti chokha is the dish most people outside Bihar think of first. Litti are balls of whole-wheat dough stuffed with sattu, or roasted gram flour, mixed with garlic, ginger, onion, coriander leaves, lime juice, carom seeds, nigella seeds and mustard oil. They are traditionally roasted over a fire and often dipped in ghee.

Chokha, the accompaniment, is a mash of roasted vegetables such as brinjal, tomato and potato, seasoned with mustard oil, onion, garlic and green chilli.

Together they make a complete meal. Litti chokha is especially popular in the Magadh region and is a common street food in Bihar’s towns and cities.
